Circuit training - beginning the third round



I started again with Kayla Itsines BBG circuit trainings. I have completed the first 12 week set already two times and now after a long flu period I thought it would be good to start it from the very beginning again :). Just love the BBG guides. I have bought the second guide also, but have not yet started with it. I just want to build a strong basis first. Also waiting for the summer, so that I can do the circuit trainings outside on the terrace.

Mini holiday in Stockholm


We made a mini holiday to Stockholm during the Easter break. It was such a relaxing trip. We didn't have any special plans - just enjoying the sunny weather, spring time, city, shopping, cafes, good food, some sparkling and nice views from the 15th floor of our hotel room. It was a perfect escape from the routines at home.

Asian egg noodles with avocado-tomato sauce



Asian egg noodles with avocado-tomato sauce served with avocado bread slices is easy and quick to prepare and very tasty. The entire family just loves this food. This is ideal food for days when you need a quick and easy dinner - like today on Monday evening.



Avocado-tomato sauce

1 red chili, finely chopped
2 garlic cloves, peeled and crushed
olive oil
2 avocados
1 lime juice
250-300 g cherry tomatos, cut in half
2 tbsp honey
salt
2 tbsp leaf parsley, finely chopped

Heat a little oil in a frying pan and add chili and garlic. Let them fry for a while. Add tomatoes and let them cook until softened. Add salt, honey and parsley. Mix all together. Add avocado pieces and lime juice just before served.


Asian egg noodles

egg noodles
salt
water

For the noodles, bring a large saucepan of salted water to the boil. Add the noodles to the pan and cook as suggested on the packet - usually only 3-4 minutes. Drain the noodles.


Avocado bread

Bread slices

1-2 avocados, peeled, pitted, crushed
juice of lemon
sugar
a pinch of sea salt
black pepper
dried chili

Mix all the ingredients and coat the bread slices with the avocado mixture.



And enjoy the delicious dinner :).

Rhubarb-strawberry pie


Oh, this pie is one of my favorite ones - a rhubarb-strawberry pie. I just got so inspired of all the delicious cakes and pies during our holiday in Austria, that I just got to bake something delicious also at home.

Rhubarb-strawberry pie


Pastry 

125 g unsalted butter
2 tbsp sugar
1 egg
3 dl flour
1 tsp baking powder
1 tbsp milk


Preheat the oven to 200 C. Mix the butter and sugar together. Add the egg. Mix all the dry ingredients and add them to the mixture and finally add milk. Shape the dough to the baking tin. Bake it in the oven about 15 minutes. In the meanwhile prepare the filling and the almond mixture. 
 
Filling 

400 g fresh rhubarb in small pieces
1/2 dl water
1 dl gel sugar
1/2 l fresh strawberries
 
Cook the rhubarb pieces in a water about 8 minutes and add the sugar. Mix until the sugar has melted. Let the mixture cool for a while. Prepare the almond mixture. 


Almond mixture

50 g almond paste
50 g unsalted butter 
1/2 dl sugar
1/2 dl flour

Mix all the ingredients. 


Add the filling to the baked pastry and add the almond mixture. Bake the pie another 15 minutes. Let it cool for a while. Serve with ice cream or with whipped cream. Yummy :)!
