Herb potatoes and lemon-thymian chicken with fruity salad


I love different kind of herbs and try to use them often when preparing food. This time I decided to make herb potatoes and lemon-thymian chicken with fruity salad. This is easy to prepare and so tasty. This meal got high scores from my own food critics :).


Herb potatoes

1 kg new potatoes - from Spain this time
1/2 dl olive oil
salt
black pepper

Herb oil for the potatoes

1/2 dl olive oil
2-3 garlic gloves chopped
2 tbsp leaf parsley chopped
2 tbsp basilikum chopped
2 tbsp thymian chopped
salt
black pepper

Cook the potatoes until soft. Place them in a roasting pan and season them with oil, salt and pepper. Preheat the own to 200 C degrees.

Mix the herb oil ingredients together and drizzle the mixture over the own-baked potatoes just before serving.


Lemon-thymian chicken

4 chicken breast fillets cut into slices
2-3 garlic gloves chopped
olive oil
2 tbsp thymian
salt
black pepper

Lemon-thymian dressing

1/2 dl olive oil
1/2 dl lemon juice
3 tbsp honey
3 tbsp thymian
salt
black pepper

Fry the chopped garlic in the oil a little bit and add the chicken slices. Fry them until the slices are golden brown. Season the slices with thymian, salt and pepper. Add them to the roasting pan with the potatoes. Cook them in the oven about 20 minutes.


Mix the herb oil ingredients together and drizzle the mixture over the own-baked chicken slices just before serving.



 Prepare the salad in the meanwhile.
